Tricolore

(Serves 2)

Ingredients for the vanilla cream:
1c cashews (soaked for about 1 hour)
½ c orange juice
⅛ teaspoon salt
⅛ teaspoon vanilla powder
¼ teaspoon lucuma
½ banana
½ teaspoon lemon juice

Method:
In a blender, combine all ingredients and mix until smooth and creamy.

Ingredients for the mango cream:
One very ripe mango
½ banana
A pinch of salt

Method:
In a blender, combine all ingredients and mix until creamy.

Ingredients for the blackberry cream:
1c blackberries

Method:
Blend the blackberries in a blender until smooth.

In a glass, alternately layer the blackberry, mango and vanilla cream.
Decorate with blackberries and physallis.
