Marinated Nettles

One jar of nettle tops. (I take the jar with me in the garden and harvest the nettle tops straight into the jar. I also press them gently to fill the jar as compactly as possible.
3 cloves garlic
Zest of one lemon
Juice of three lemons
Olive oil

1. Add garlic, lemon zest and lemon juice to the nettles in the jar.
2. Add enough olive oil so all nettles are completely covered.
3. Let sit in a warm place, like a kitchen.
4. Already after three days, you can open the jar and start eating the first      
    marinated nettles. Tastes great with salad, on top of raw crackers with soft
5. Like this, you can daily take some nettle tops out of the jar. With time, the taste
    becomes more and more delicate.
6. When there are no more nettles, you end up with lovely dark nettle oil that is
    delicious for all sorts of salad dressings.
