Lemon Thyme Cheese Balls

Ingredients:
2c macadamia nuts (soaked for about 4 hours)
1c lukewarm water
½ teaspoon probiotic powder (2 capsules)

Method: 
1. In a blender, blend macadamia nuts and water until smooth and creamy.
2. Add the probiotic powder and mix again.
3. Line a strainer with cheesecloth or another fine-meshed cloths. Fill in the chees mass, flip over the sides of the cloth, place a plate and a weight (glass jar filled with water) on top of it.
4. Let ferment at a warm place for 24 hours.
5. After the fermentation place the cheese in a bowl and add:

¾ teaspoon salt
1 ½ teaspoons nutritional yeast
2 teaspoons lemon juice
4 tablespoons fresh lemon thyme, chopped small 

6. With an ice-cream scoop form balls.
7. Chop  ground ivy flowers and lemon thyme.
8. Chop flowers of yellow dead-nettle and lemon thyme.
9. Roll the cheese balls in the two different coatings.
